Fresh peaches have been a staple in my kitchen all season long. Their season isn’t super long, so this year I am vowing to use them in everything starting from Peach Crostini with Ricotta and Crispy Prosciutto to Easy Summer Peach Galette to this Peach Raspberry Bellini that I am sharing today.

Refreshing and bubbly, this Peach Raspberry Bellini is simply a peach version of a mimosa. Even though it comes together with just a few simple ingredients, it has a luxurious look that makes it well-suited for the fanciest of occasions- brunches, pool parties, bridal showers or girls' night out. Anyone who loves peaches will be downright obsessed with this cocktail.
Peach Bellini-A Toast to Italian Tradition

Adored across the world for its succulent fruity flavour and soft-pink radiance, Bellini is a classic Italian cocktail made with peach puree and prosecco. Invented by a Venetian bar owner, Giuseppe Cipriani in 1948, the bellini is named after a popular Italian artist whose paintings inspired its creation.

Which wine is best for Peach Bellini?

Peach Bellini was created in Venice, Italy, so the classic wine choice is Prosecco, a dry sparkling Italian white wine. But, you can use any type of sparkling wine or champagne that you like for this drink.


Can you make Bellini with frozen peaches?

Yes, absolutely. This drink was created to work in any season, so if fresh peaches aren't available, frozen peaches work perfectly. The only trick is to let the frozen peaches completely defrost before blending, or they won’t blend.


Tips and Tricks:
  • A traditional Bellini is made with white peaches, which gives the drink a pink hue. Since white peaches aren’t widely available where I live, I have used regular peaches that gives these Bellinis a brighter orange color. If you can’t find great peaches, use frozen peaches.
  • I don’t suggest making this Peach Bellini Cocktail ahead of time. Once the peaches are pureed they may turn a little brown. So, make the puree right before you intend to serve the beverage.
  • If you’re using fresh peaches, you’ll need to peel them first. I think the easiest way to do this is with a vegetable peeler. Just make sure to press lightly so that you don’t peel off too much of the fruit!

Ingredients:
  • 2 medium peaches
  • 3 tablespoons white sugar
  • 1/2 cup water
  • 10-12 raspberries
  • Prosecco, chilled
  • Fresh Mint, for garnishing(optional)

Instructions:
  1. Firstly, we will prepare the raspberry syrup. To make it, place the sugar and water in a medium saucepan over medium heat. Cook for 1 minute, keep on stirring, until the sugar dissolves.
  2. Add the raspberries and cook until the berries break down, about 5 to 6 minutes, turning the heat to low when it starts to boil. Break down the berries with a spatula as needed. Once the berries are fully broken down, strain the syrup into a jar using a strainer.
  3. Allow it to cool, the syrup will thicken as it cools.
  4. Peel the peaches, remove the pit and chop them up into pieces. Add the peach chunks to your blender and blend until smooth.
  5. Pour the peach mixture into champagne flutes until half full.
  6. Then, slowly fill the remaining glass with prosecco. Gently stir and top with more prosecco.
  7. Add in 1 teaspoon of the prepared raspberry syrup to each glass.
  8. Serve immediately.
