We all have been in a similar situation. After a whole day of healthy eating, when you think that you have turned a corner, the clock strikes 3 p.m, and even before realizing, you are halfway through a bag of crisps or a big block of chocolate.

When it comes to healthy eating, there’s one strategy that works time and again, and that is meal prepping. It has been a life-changer for me. Amidst hectic weekday schedules, it not only saves a lot of my time but also opens a world of healthy treats that are readily available when hunger strikes.


These Carrot Cake Bliss Balls take the flavors of a traditional carrot cake and turn it into a healthy snack!
Packed with fresh carrots and oats and naturally sweetened with dates, these Carrot Cake Bliss Balls satisfy your hunger and give you an instant energy boost. This no-bake recipe comes together in no time and makes for a healthy and delicious snack you can grab in a pinch. They are perfect even for novices in the kitchen!

You can make a big batch of these over the weekend and store them in an airtight container in the fridge for a week.

P.S- I like to toast the oats and the walnuts in a dry pan for a few minutes before adding them to the processor as it amplifies the flavors. But this is optional, and you can skip this step if you are in a hurry.


Ingredients:
  • 1 cup rolled oats
  • 1/2 cup walnuts
  • 8-10 pitted dates
  • 2 medium size peeled carrots
  • 1/4 cup raisins
  • 1 1/2 tsp cinnamon
  • Zest of 1/4 of an orange
  • Juice of 1/4 of an orange
  • Desiccated coconut (for rolling)

Instructions:
  1. In a frying pan, dry roast the oats and walnuts over gentle heat. This step is optional and you can definitely skip to the next step to get started.
  2. Add all the ingredients (except the desiccated coconut) into a food processor and blitz them for around three minutes or until well combined.
  3. Scoop tablespoons of the mixture and form little balls with your hands.
  4. Then, roll the balls in the dessicated coconut.
  5. Enjoy! Store in an air tight container in the fridge.
