Carrot Cake Bliss Balls
We all have been in a similar situation. After a whole day of healthy eating, when you think that you have turned a corner, the clock strikes 3 p.m, and even before realizing, you are halfway through a bag of crisps or a big block of chocolate.
When it comes to healthy eating, there’s one strategy that works time and again, and that is meal prepping. It has been a life-changer for me. Amidst hectic weekday schedules, it not only saves a lot of my time but also opens a world of healthy treats that are readily available when hunger strikes.

You can make a big batch of these over the weekend and store them in an airtight container in the fridge for a week.
P.S- I like to toast the oats and the walnuts in a dry pan for a few minutes before adding them to the processor as it amplifies the flavors. But this is optional, and you can skip this step if you are in a hurry.
Ingredients:
- 1 cup rolled oats
- 1/2 cup walnuts
- 8-10 pitted dates
- 2 medium size peeled carrots
- 1/4 cup raisins
- 1 1/2 tsp cinnamon
- Zest of 1/4 of an orange
- Juice of 1/4 of an orange
- Desiccated coconut (for rolling)
Instructions:
- In a frying pan, dry roast the oats and walnuts over gentle heat. This step is optional and you can definitely skip to the next step to get started.
- Add all the ingredients (except the desiccated coconut) into a food processor and blitz them for around three minutes or until well combined.
- Scoop tablespoons of the mixture and form little balls with your hands.
- Then, roll the balls in the dessicated coconut.
- Enjoy! Store in an air tight container in the fridge.
