Thai Chicken Satay Skewers with Peanut Sauce
We are gearing towards September, and the days are getting shorter. Like all good things, summer is coming to an end and I am trying to savor the last few weeks before fall begins to loom. Ever since I tried these Thai-inspired Chicken Skewers, I have wanted to share the recipe on my blog, and finally, it is here!
These Thai Chicken Satay Skewers are bursting with fresh, delicious, and summery flavors! Succulent, spicy marinated chicken pieces are loaded onto the skewers and grilled to perfection, and served alongside an addictive peanut sauce.
Each bite of these grilled chicken skewers is like taking a bite of heaven! Though this recipe is perfect for outdoor summer BBQ parties or gatherings, it can also be devoured year-round even when it is not grilling season.
Although the chicken skewers are flavorful all by themselves, they become even more delicious when dunked into the rich and creamy peanut sauce and always hits the spot!
The recipe calls for marinating the chicken, don't skip the step and plan ahead if you can- it is the time in the fridge that gives the chicken so many flavors.
What to Serve with these Skewers?
Serve your skewers as an appetizer with the peanut sauce, sliced onions, sliced cucumber, and a sprinkle of cilantro.This is also a delicious dinner when served with some steamed white rice.

- Soak the wooden skewers in the water for at least an hour, so they don’t catch on fire.
- Use chicken thighs instead of chicken breasts for the recipe. They’re much easier to cook and don't dry out.
- You can also cook the skewers in the oven. Load the marinated chicken pieces onto the skewers and then place them on a sheet pan lined with foil and spray with cooking oil. Bake at 200 degrees Celsius for about 20-25 minutes, or until the chicken is completely cooked through.
- The peanut sauce is great as a salad dressing and also delicious when tossed with noodles.

For the Chicken Satay Skewers
- 900g boneless, skinless chicken breasts, cut into 1 inch cubes
- 1/3 cup coconut milk
- 2 Tbsp soy sauce
- 1 tbsp freshly grated ginger
- 2 tsp minced garlic
- 1 Tbsp ground coriander
- 1 Tbsp ground cumin
- 1 tsp turmeric powder
- 3 tbsp natural peanut butter
- 1 tbsp soy sauce
- 1 tbsp light brown sugar
- 1 tbsp freshly squeezed lime juice
- 1 tsp freshly grated ginger
- ½ tsp red chilli flakes
- 200ml coconut milk
- Fresh cilantro
- Sliced red onions
- Sliced cucumber
- Begin by soaking the wooden skewers in water for at least an hour. This will prevent them from burning when cooking.
- In a medium-sized mixing bowl, combine the coconut milk, garlic, ginger, soy sauce, coriander powder, cumin powder and turmeric powder.
- Place the chicken pieces in a large bowl along with the prepared marinade, gently mixing it to ensure all surfaces of the chicken pieces are covered. Let it marinate for at least 1 hour and up to 6 hours.
- Preheat the grill to medium high heat.
- Remove the marinated chicken from the refrigerator, drain off the excess water, then thread the chicken pieces onto the skewers. Brush them with oil.
- Cook the chicken on the grill until it's completely cooked through for about 10- 12 minutes.
- While the skewers are cooking, we will prepare the peanut sauce.
- Place all the sauce ingredients in a pan except the lime juice. Heat over medium heat , whisking constantly as it begins to warm up.
- Don't let the sauce boil, just turn down the heat as it approaches boiling point. ( Cooking the sauce over high heat can cause it to separate.) Cook until the sauce thickens slightly and has a smooth consistency and then add the lime juice.
- Serve the skewers with the peanut sauce, sliced cucumbers, sliced red onion and fresh cilantro.
