Easy Chicken Ramen

The cooler weather always want us to cozy up with a bowl of soup, and what could be more satisfying than slurping up a giant bowl of ramen. However, having said that, making a traditional ramen is an extremely time-consuming process, requiring the broth to be simmered for a few hours. So this recipe is a quick and easy version that can be made in the comfort of your own home and is even better than the ones in a restaurant!

This Chicken Ramen features deep and flavorful broth, al dente ramen noodles, crispy roasted chicken, fresh vegetables and boiled eggs. Comforting, soul satisfying and brimming with flavors, this homemade version is ready on the table under an hour and always hits the spot.
What is Ramen?

Ramen is a Japanese noodle soup made with a rich-flavored broth, long thin noodles and topped with an assortment of toppings. It is an integral part of the country's cuisine and has become undeniably popular throughout the world over the years.

The beauty of this recipe is that it is like a blank canvas. You can add whatever you would like to make it your own and zazz things up! From the vegetables and protein to the toppings, everything can be switched up for whatever ingredients you have in hand. For my take on this recipe, I added sliced carrots, sliced scallions, grilled chicken, and of course boiled eggs!

Top off your ramen with lots of fun goodies to give your bowl flavor, color, and texture. Here are some of the other vegetables that you can use:

  • You can substitute the chicken in this recipe with any protein of your choice like pork, beef, duck or prawns.
  • To make this recipe vegetarian,use vegetable broth instead of chicken broth and ditch the egg and substitute the chicken with tofu.

Ingredients:
    For the Chicken Marinade
  • 2 Tablespoon vegetable oil
  • 4 boneless chicken breast
  • 1 1/2 teaspoon minced garlic
  • 1 1/2 teaspoon minced ginger
  • 1 Tablespoon Black pepper
  • 1 Tablespoon Soy sauce
  • Salt, to taste

  • For the Ramen
  • 1 1/2 tablespoon sesame oil
  • 2 tsp minced garlic
  • 2 tsp minced ginger
  • 2 tsp minced garlic
  • 5 cups chicken stock
  • 3 tbsp light soy sauce
  • 1-2 tbsp sriracha hot sauce, you can adjust as per your taste
  • 3 packets ramen noodles
  • Black pepper, to taste
  • 4 boiled eggs ( soft boiled or hard boiled)
  • Carrots, peeled and cut into thin strips
  • Spring onions, chopped
  • Black and white sesame seeds ( for garnishing)

Instructions:
  1. In a medium bowl add the chicken breasts, the minced ginger, garlic, salt, black pepper and the soy sauce. Coat the chicken well and marinate for 15 minutes.
  2. Add the marinated chicken and cook one side for 3-4minutes. Flip the chicken and cook until golden brown on the other side, about 3-4 minutes. ( Don't overcook or it would dry out). Once cooked, transfer to a chopping board, slice into thin strips and keep aside.
  3. For the ramen, heat a large pot with oil. Add the minced ginger and garlic and cook for 2 minutes.
  4. Then, add in the light soy sauce, the chicken stock, the black pepper and the sriracha sauce and allow it to boil.
  5. Cover and cook for 10 minutes and then add in the ramen noodles and cook for 5 minutes.
  6. To assemble, divide the noodles between the bowls and ladle over the broth.
  7. Then, top with the chicken slices,boiled eggs, thinly sliced carrot strips and chopped green onions.
  8. Sprinkle the sesame seeds and serve immediately!
