Ingredients:
- 1 cup dried pitted dates
- 1 cup blanched almonds or cashews
- 1/4 cup unsweetened shredded coconut
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- Extra dessicated coconut, for rolling
Instructions:
- Soak the dates in a bowl of warm water for 20 minutes. Drain the water.
- Add the dates to a food processor along with the almonds/cashews, desiccated coconut, vanilla extract and salt. Process until well combined and until it forms into a sticky dough.
- Using your hands, roll into bite-sized balls, and then roll into a plate of shredded coconut to top if desired.
- Store bliss balls in an airtight container in the fridge.
