I am all about delicious snacks that are easy to make, use simple wholesome ingredients, and don't involve a lot of work and preparation. The Salted Carmel Bliss Balls that I am sharing today fit the bill!

Bite-size and healthy, these Salted Caramel Bliss Balls are the perfect make-ahead snack for anyone on the go! With only 5 ingredients, these are vegan, gluten-free, and refined sugar-free.
Bliss balls, energy balls, date balls…whatever you choose to call them they are downright delicious and will give the store-bought ones a run for their money!

Unlike other sugary treats that spike the blood sugar level and leave you feeling hungry afterward, these little power-packed bites are made with dates that will fuel your body with nutrients while satisfying your sweet tooth.

Ingredients:
  • 1 cup dried pitted dates
  • 1 cup blanched almonds or cashews
  • 1/4 cup unsweetened shredded coconut
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • Extra dessicated coconut, for rolling
Instructions:
  1. Soak the dates in a bowl of warm water for 20 minutes. Drain the water.
  2. Add the dates to a food processor along with the almonds/cashews, desiccated coconut, vanilla extract and salt. Process until well combined and until it forms into a sticky dough.
  3. Using your hands, roll into bite-sized balls, and then roll into a plate of shredded coconut to top if desired.
  4. Store bliss balls in an airtight container in the fridge.
