The temperatures are soaring high, and we are enjoying the most coveted Summer. Looking outside to find the sun shining bright makes me want to enjoy the beautiful world and connect with nature. And what better way to celebrate and relish summer's bounty than a fresh drink in hand!

This Virgin Pina Colada is a refreshing and non-alcoholic version of the classic tropical Pina Colada. Rich and creamy, it is the perfect way to cool down on a hot summer day, and you won't even miss the alcohol!
This mocktail combines the creamy richness of coconut with the tangy sweetness of pineapple, creating a beverage that’s not just refreshing but downright irresistible.

WHAT IS A PINA COLADA?

The name Piña Colada is Spanish for “strained pineapple''. It is a popular classic cocktail that entered the pantheon of tropical drinks in Puerto Rico in the 1950’s and went on to become the official drink of the country in 1978.


It has a distinct sweet taste and in its original version mixes the tropical flavor of pineapple and coconut cream with the kick of rum.

THE DIFFERENCE BETWEEN CREAM OF COCONUT AND COCONUT MILK

The use of cream of coconut gives this cocktail it’s signature creaminess and sweetness compared to coconut milk. The higher fat content in coconut cream will result in a thicker Pina Colada while using coconut milk will result in a thinner consistency.

  • Fresh pineapple chunks can be used in place of frozen pineapple chunks. Slice them and freeze them overnight in a ziploc bag or freezer friendly container.
  • Use Cream of Coconut to make this drink taste like a mocktail and not like a smoothie!
  • Don’t want to make this drink virgin? Add a shot of rum (white, dark, or coconut) before blending.
  • The drink should be enjoyed immediately as it will melt the longer it sits.

Ingredients:
  • 2 cups frozen pineapple chunks
  • 1 cup pineapple juice
  • 1 cup cream of coconut
  • Pineapple wedges, for garnish

Instructions:
  1. Add the frozen pineapple chunks, pineapple juice, and cream of coconut to a blender and puree until smooth and creamy.
  2. Pour into glasses, garnish with pineapple wedges/maraschino cherries/cocktail umbrellas if desired. Serve immediately.
  3. Enjoy!
