Weekend getaways, dinners cooked outside, and drinks on the deck. Yes, that’s what summer is all about! With summer slowly approaching, I want to share a recipe that has everything you need to make your next summer cookout unforgettable.

These Bang Bang Chicken Skewers are bursting with fresh, delicious, and summery flavors! Tender, succulent chicken pieces are loaded onto the skewers, grilled to perfection, and slathered with a sweet, tangy and spicy Bang Bang sauce.
WHAT DOES BANG BANG SAUCE TASTE LIKE?

Bang Bang Sauce is a rich, sweet and spicy sauce, extremely versatile, that pairs well with grilled meat, fried seafood, veggies or anything that needs a boost of bold flavors. It is so addictive that you’ll want to try it on everything.

You can easily play with the spice level or amount of sweetness depending on what you’re serving it with.
CAN THE SKEWERS BE MADE AHEAD OF TIME?

Definitely! You can assemble the skewers ahead of time, store them in the refrigerator and grill just before serving. You can also prepare the Bang Bang sauce ahead of time, store it in a jar and keep in the refrigerator covered for upto 1 month.

WHAT TO SERVE WITH THESE SKEWERS?

Serve these Bang Bang Chicken Skewers as an appetizer or pair with a refreshing green salad and/or rice to let this protein dish shine as the main course of the meal.

CAN THE SKEWERS BE MADE IN THE OVEN?

To make the skewers in the oven, preheat oven to 205°C. Line a baking sheet with parchment paper. Place the chicken skewers onto the lined baking sheet. Cook for 20-25 minutes, flipping halfway through, or until the chicken is cooked through and reaches an internal temperature of 74° Celsius (165°Fahrenheit). Transfer the skewers to a plate and brush the bang bang sauce on top. Serve immediately.

HOW TO STORE AND REHEAT THE LEFTOVERS?

The skewers are easy to store and reheat, making it a great meal prep recipe for the week. Once cooked, leftovers can be stored in an airtight container and stored in the fridge for up to 3 days. Reheat them in the oven just until warmed through. They can also be reheated in a microwave, but be careful not to overheat or the texture of the chicken can become tough and chewy.

Ingredients:
    For the Chicken Skewers
  • 800 g boneless, skinless chicken breasts, cubed into 1 inch pieces
  • 1 Tablespoon extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoon paprika powder
  • 1 teaspoon black pepper
  • Salt, to taste

  • For the Bang Bang Sauce
  • 1 1/4 cups mayonnaise
  • 2/3 cup Thai sweet chili sauce
  • 2 teaspoons Sriracha ( adjust as per your taste)

Instructions:
  1. In a large bowl, combine the cubed chicken breasts, olive oil, paprika powder, garlic powder, salt, and pepper. Toss to evenly coat the chicken. Allow the chicken to marinate for 30-60 minutes.
  2. If you are using wooden skewers, soak the skewers in water while you prepare everything, this helps to prevent them from burning.
  3. Thread the seasoned chicken pieces onto skewers, leaving a small space between each piece to ensure even cooking.
  4. Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the chicken is fully cooked and has a nice char outside.The internal temperature should reach 74° Celsius ( 165°F).
  5. While the chicken is grilling, prepare the Bang Bang sauce. In a small bowl, whisk together mayonnaise, sweet chili sauce, and Sriracha sauce until smooth. Adjust the amount of Sriracha based on your desired level of spiciness.
  6. Transfer the skewers to a plate, brush with the prepared bang bang sauce and serve immediately.
