Tomato season is in full swing, which means we cannot get enough of the luscious juicy tomatoes that have made their way to the farmers' markets, grocery aisles, and even our backyard gardens. If you are looking for ways to put all of that sweet summer bounty to good use, then look no further.

Caprese Salad or Insalata Caprese is one of those classic Italian recipes that let the pristine flavors of summer tomatoes shine. These skewers have everything you love about a traditional Caprese Salad but transformed into an easy appetizer ready to take on the go.
Juicy cherry tomatoes, creamy balls of mozzarella, and fragrant basil leaves, all threaded onto skewers and drizzled with a balsamic glaze for a simple yet impressive appetizer. With the perfect balance of flavors and textures, these Caprese Skewers truly capture the essence of summer.

This is a simple recipe that calls for a few basic ingredients. So make sure you use the freshest ingredients you can get your hands on.

  • Fresh Mozzarella: I love using fresh mozzarella pearls in this recipe. They are so soft, and add a creamy and delicate flavor to the skewers. If you do not find mozzarella pearls, you can use regular mozzarella cheese instead.
  • Cherry Tomatoes:These skewers use bright, juicy, and ripe cherry tomatoes that add a pop of color and freshness. You can use grape tomatoes if cherry tomatoes are not available.
  • Basil leaves: Fresh basil leaves complement the sweetness of the tomatoes and the creaminess of the cheese.
  • Salt and Pepper: A little salt and pepper for seasoning.
  • Olive oil and Italian Seasoning: Olive oil and Italian seasoning for extra flavor and seasoning.
  • Balsamic Dressing: A drizzle of the balsamic dressing adds a wonderful tang to these skewers.

  • Can you make these ahead of Time?

    These skewers are best served when they are fresh. If you are making these for a crowd, you can make them a few hours ahead of serving and keep them covered in the fridge. Add on the balsamic drizzle and the olive oil right before serving.

    Ingredients:
    • 20 red cherry tomatoes
    • 20 pearl mozzarella balls
    • 20 small basil leaves
    • 2 Tablespoons olive oil
    • 2 teaspoons Italian seasoning
    • 2 Tablespoons balsamic glaze
    • Salt,to taste
    • Ground pepper,to taste

    Instructions:
    1. Thread one cherry tomato, then one basil leaf and then one pearl mozarella onto a skewer. Then repeat with another basil leaf, tomato and mozarella pearl. Repeat with all the remaining skewers.
    2. Make sure to leave a little bit of space at the end of each skewer so people can hold them easily.
    3. In a small bowl, combine together the olive oil, Italian seasoning, salt and pepper.
    4. Arrange the prepared skewers on a serving platter and drizzle the olive oil mixture and the balsamic glaze over them right before serving.
    5. Serve immediately and enjoy!
