Italian Tomato Basil Bruschetta

Italian Tomato Basil Bruschetta is a classic, easy and delicious appetizer that is perfect in its simplicity! Fresh tomatoes, a good quality extra virgin oil, fresh basil, and a crusty bread are a few basic ingredients you need to make this-if you get these right, you can never go wrong!
What is Bruschetta?
Bruschetta, pronounced as ''brusketta'', is a classic Italian antipasto, or, appetizer, that’s made with perfectly crisp grilled bread and topped with a combination of fresh tomatoes, garlic, and basil. While bruschetta, with its history spanning centuries of Tuscan tradition, may seem like just a slice of garnished bread, it is one of the most flavorful appetizers in the Italian repertoire.
Like most classic Italian dishes, the vibrant, fresh flavors shine through in this Bruschetta. Everyone will be super satisfied and will keep coming back for more.
Can you prep this ahead of Time?
If you are making these for a party, you can prep the bread and the tomato topping hours in advance and then assemble them just before serving.

How to Serve Bruschetta?
They are best eaten immediately when they are warm and crispy. If they are kept for a long time, they will become soggy.
Notes
- Use the best quality extra virgin olive oil for this recipe.
- Make sure you use fresh and ripe tomatoes!
- Add the salt to the tomato mixture right before serving! Adding it too early causes the tomatoes to release all those bright, acidic juices.
- If you are serving these for your guests, you can arrange the toasts on a platter and the tomato mixture in a separate bowl. This way all your guests can assemble their own bruschetta.

For the Tomato and Basil Topping
- 5 ripe and juicy tomatoes
- 1/3 cup basil leaves, chopped
- 2 Tbsp extra virgin olive oil
- 1 Tbsp garlic, minced
- Salt, to taste
- Black pepper, to taste
- 1 baguette
- 3 Tbsp extra virgin olive oil
- 1 Tbsp garlic, minced
- 1 red onion, minced
- Core and dice the tomatoes. Drain any excess juice and transfer the diced tomatoes to a medium bowl.
- Stack the basil leaves, roll them tightly and thinly slice into ribbons. Transfer them into the bowl of tomatoes.
- Season the tomatoes with 2 Tbsp olive oil, 1 Tbsp minced garlic, and pepper. Stir gently to combine and set aside to marinate for 15 minutes.
- To prepare the garlic infused oil, mix 1 Tbsp of minced garlic with 3 Tbsp olive oil.
- Preheat oven to 205˚C.
- Cut the baguette into 1/2” thick slices, slicing diagonally.
- Arrange them on a baking sheet and brush the garlic infused olive oil on both sides of the bread slices. Bake them for 5 minutes, then broil on high heat for 1 to 2 minutes or until the edges are golden brown.
- Add the salt to the tomato mixture before serving.
- Top each slice with the tomato mixture and some finely minced red onion. Serve immediately.
