I’m super excited today because this is my 100th blog post. When I embarked on this food blogging journey, little did I know that it would slowly turn into my world. My blog has evolved over the past two years , and so have I. I am learning something new every day, and I know I still have a long way to go.

It is not all sunshine and rainbows, there are days when I feel exhausted, days when I run out of ideas, or days when I am struggling to click appealing photos. But my heart rejoices every time I hear someone enjoyed one of my recipes, and that is my greatest driving force and inspires me to keep working hard. I want to take a moment and thank each one of you for taking the time to read my blog and supporting me.
Warm weather calls for recipes that are easy, light, and refreshing, and the recipe that I am sharing this week is no exception. Whenever I am looking for a light meal for hot summer days, I turn to this super easy Pineapple Salsa because it’s just so incredibly delicious and is a fun and colorful twist on classic salsa.
Loaded with slices of pineapple, red onion, red bell peppers, jalapenos, and cilantro all tossed together and seasoned with lime juice, this Pineapple Salsa is bursting with vibrant flavors!

The pineapple slices add a hint of sweetness, and there’s just enough spice from the jalapenos to add a kick.
This salsa pairs great with classic tortilla chips as a light appetizer, or as a topping over grilled chicken, fish, shrimp, tacos, and so much more.

Ingredients:
  • 2 cups fresh pineapple,diced
  • 1 red bell pepper, diced
  • 1 red onion, chopped
  • 1 jalapeño, seeds removed and chopped
  • 4 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt as per taste
Instructions:
  1. In a medium bowl, combine the pineapple, bell pepper, jalapeño, red onion, and cilantro. Add the lime juice and salt, and stir to combine.
  2. Taste and season with additional salt if required.
  3. For best flavor, let the salsa rest for 10 minutes or longer before serving.
  4. Enjoy!
