Creamy Mixed Berry Popsicles

The birds who had been caught until now in winter's prison make their presence felt in the backyard, mornings and evenings,with their constant chirping. It is the seemingly brief span of these glorious months that makes them so much treasured.
To celebrate the season and the abundance of fresh berries available, I whipped up a batch of these Creamy Mixed Berries Popsicles. These refreshing treats are a healthy way to keep you cool in the summer months and will be a guaranteed hit with kids and adults alike.

Ingredients:
- 1 1/2 cups mixed berries ( strawberries, raspberries, blueberries)
- 1 can full fat coconut milk
- 3-4 tablespoons maple syrup ( or honey)
- 1/2 teaspoon vanilla extract
Instructions:
- Add the mixed berries, coconut milk, the maple syrup and the vanilla extract to a blender and blend on high speed until very smooth.
- Pour the mixture into popsicle mold until almost full, leaving about 1/2-inch of room at the top for popsicles to expand when frozen. Insert wooden popsicle sticks and place popsicle mold in the freezer for 6 hours or better overnight.
- Run the popsicle molds under warm water for about 5 seconds to remove popsicles easily.
