Mango Strawberry Popsicles
We have entered the first week of June, which means that it is time to bring out all the recipes that scream summer. Fruit Popsicle is the first thing that comes to my mind when I think of summer. Because let's be honest, nothing helps unwind and unplug like biting into a frozen treat after a long, sweltering day.
While it can be pretty tempting to bite into those store-bought popsicles that provide a sigh of relief during the hottest days, most of the time they run a little high in sugar, artificial colors, and preservatives.
If you want to enjoy the nostalgic treat without all the extra sugar, then you have to try these Strawberry Mango Popsicles. One bite into these will take you back to your childhood.

Ingredients:
- 300 g strawberries, diced
- Juice of half a lemon
- 3 Tbsp honey
- 350 g mango, diced
- 2-3 strands saffron (optional)
- 1 tbsp hot water (optional)
Instructions:
- Soak the saffron strands in hot water for 5- 10 minutes to get a bright colour and great flavors. However, this step is totally optional and you can omit this step.
- To a blender, add the diced strawberries, lime juice, and 2 tablespoon honey. Blend until completely smooth.
- Pour the strawberry mixture evenly into the popsicle molds.
- Wash your blender jar. Add the diced mango and one tablespoon honey to the blender and blend until pureed. Add the saffron- infused water(if using) and mix to the pureed mango.
- Pour the mango mixture over the strawberry mix, filling the molds to the top and then insert the popsicle sticks.
- Freeze for at least 4 hours or overnight.
- To remove the popsicle, run the mold under hot water for 10 seconds and then pull the popsicles out of the molds.
- Enjoy!
