Mexican Ground Chicken Tacos

Chicken is a favorite in my household for obvious reasons: it is easy, quick, and so versatile. Whenever I run out of ideas of what to make for dinner, chicken is the answer. This week I decided to combine my eternal love of tacos with my love of chicken.

You can now make every Tuesday, or any day of the week a fiesta with these Ground Chicken Tacos. They are guaranteed to get everyone in the family, including the little ones, excited for dinner.


Corn tortillas that are filled with deliciously seasoned juicy chicken and topped with shredded cheddar cheese, diced tomatoes, red onions, and chopped cilantro - every bite is a burst of vibrant and robust flavors and textures. And will transport you directly to the streets of Mexico.


The ground chicken gets cooked in a homemade taco seasoning, which is a simple combination of chili powder, garlic powder, ground cumin, salt, and pepper. You can also use this chicken filling in burritos, enchiladas, and quesadillas.


These are also great for entertaining a crowd where you just set out the ingredients and let everyone assemble their tacos the way they like them. The possibilities for toppings are virtually endless. Some great topping ideas include:

  • sour cream
  • thinly sliced jalapenos
  • tomato salsa
  • sliced avocados
  • shredded iceberg lettuce

    No more driving across to your nearest Mexican restaurant you can now enjoy your favorite tacos within the comfort of your home. Once you make these, they are sure to become part of your family dinner rotation.

    Ingredients:
    • 1 Tbsp olive oil
    • 450 g ground chicken
    • 1 medium onion, finely chopped
    • 2 cloves garlic minced
    • Salt and freshly ground black pepper, to taste
    • 2 tsp chili powder
    • 1 tsp ground cumin
    • 1/2 tsp onion powder
    • 1/2 cup tomato sauce
    • 8 flour or corn tortillas

    • For toppings
    • 3/4 cup shredded cheddar cheese
    • 1/2 cup grape tomatoes, halved
    • 1/2 cup red onions, finely chopped
    • 1/2 fresh cilantro, finely chopped

    Instructions:
    1. Heat 1 Tbsp olive oil in a non-stick skillet over medium-high heat.
    2. Add the finely chopped onion and minced garlic and cook for 3-4 minutes.
    3. Add ground chicken and cook, stirring occasionally, until almost cooked through but still slightly pink, about 6-7 minutes.
    4. Then, add in the cumin powder,chilli powder, the onion powder, the salt and pepper and then finally the tomato sauce.
    5. Simmer over medium-low heat until sauce has reduced and thickened, about 3 - 4 minutes.
    6. Heat up the tortillas on a skillet for 1-2 minutes per side before adding the chicken on top. This makes the tortillas soft, pliable and much less likely to break.
    7. Serve the ground chicken over warm tortillas and top with shredded cheese, cherry tomatoes, finely chopped red onions and cilantro or other desired toppings of your choice.
