Thailand has always been on my travel bucket list. There is so much in the tropical paradise that I would like to explore-the tranquil beaches, the ancient temples, the amazing landscapes, and most importantly the mouthwatering street food.

With the pandemic looming, most of us are currently stuck traveling from our armchairs. But we can always delve into the delights of our favorite dishes by replicating them at home. So this week, I decided to share a recipe that will take you straight to the bustling streets of Thailand.

Thai Basil Chicken is one of the most popular street foods in Thailand, that is quick and easy to make in the comfort of your own home! Finely diced chicken tossed in a sweet and savory sauce with bell peppers, cashews, and aromatic fresh basil -this dish is perfect when the hankering for Thai food strikes!

This recipe earns major points as it is made with pantry-friendly staples and does not require you to go hunting for ingredients!Do you need more reasons to love this? This chicken stir fry is made within 30 minutes which means that you can spend less time in the kitchen and more time outdoors in the sun.

Piled high on a mound of white rice with a fried egg on top, and you have yourself a plate of perfection.

You can also swap the chicken with the meat of your choice, and the dish will still taste amazing!

Ingredients:
  • 2 tablespoons vegetable oil
  • 450g boneless chicken breasts chopped into bite small pieces
  • 1 large onion chopped
  • 1-2 red bell peppers chopped into 1-inch pieces
  • 2-3 red chillies
  • 1 tablespoon minced ginger
  • 4 cloves garlic minced
  • 2/3 cup raw unsalted cashews
  • 1 cup fresh Thai basil or regular basil
  • 1 tablespoon oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon fish sauce(optional)
  • Fried eggs(optional)

Instructions:
  1. Whisk in the soy sauce, oyster sauce,fish sauce, and brown sugar together and keep it aside.
  2. Dry roast cashews by heating a large skillet to medium-high heat. Remove and set aside.However this step is optional.
  3. In the same frying pan heat oil over medium- high heat. Once hot, add the ginger, garlic, chillies, and onions, and fry for 2-3 minutes.
  4. Add the chicken and stir-fry for 5 minutes, breaking up the chicken into small bits. Then add the peppers and cook for a minute.
  5. Whisk the sauce to recombine, then add it to the skillet and cook, stirring constantly until thickened for around 2-3 minutes. Remove from the heat and stir in the basil and cashews.
  6. Serve hot over white rice and fried egg.
