WHAT KIND OF CHICKEN SHOULD BE USED FOR THIS RECIPE?
I highly recommend using skinless, boneless, chicken thighs for these skewers. They have a higher fat content than chicken breasts-which makes them a little crispy outside and more tender and juicy inside.
CAN THESE SKEWERS BE MADE AHEAD OF TIME?
These skewers are best made fresh. However, you can marinate the chicken in the seasonings, thread onto the skewers, wrap and store them in the refrigerator a few hours ahead or upto overnight.
The garlic butter sauce can also be made in advance and stored in the fridge.

HOW TO STORE AND REHEAT THE LEFTOVERS

For the Chicken Skewers
- 900 g skinless, boneless chicken thighs, cut into 1-inch cubes
- 4 Tablespoons mayonnaise
- 1 Tablespoon vegetable oil
- 1 teaspoon paprika powder
- 1 Tablespoon garlic powder
- 1 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 5 Tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1/2 teaspoon black pepper
- 2 Tablespoons Parmesan cheese, finely grated
- 1 Tablespoon fresh parsley, minced
For the Garlic Parmesan Butter
Instructions:
- In a large bowl, combine mayonnaise, vegetable oil, garlic powder, paprika powder, salt, and black pepper. Add the chicken pieces and toss to coat evenly.
- Thread 4-5 chicken cubes onto each skewer, ensuring to leave a gap at both ends.
- To prepare the Garlic Parmesan Butter, combine the butter with parmesan cheese, minced garlic, parsley and black pepper in a bowl.
- Preheat oven to 205°Celsius. Line a baking sheet with parchment paper.
- Place the prepared chicken skewers onto the lined baking sheet. Bake for 20-25 minutes, flipping halfway through, or until the chicken reaches an internal temperature of 74°C.
- Remove the skewers from the oven and brush them with the prepared garlic parmesan butter.
- Sprinkle over more parmesan while they're still hot, if desired. Enjoy!
