Who doesn't love chocolate? And what better if you can start your mornings with a delicious chocolatey breakfast. This Chocolate Raspberry Granola will raise your spirits in the morning and will make you jump out of bed.

If you have been following my blog for a while, you know I am addicted to making my own granola, because nothing beats the taste of fresh homemade crunchy granola. Usually, I make a batch on the weekends and then I have something to look forward in the mornings all week long.
Made with rolled oats, shredded coconut , raw cacao powder, sliced almonds ,dark chocolate chunks and dried raspberries, this Chocolate Raspberry Granola is naturally sweetened and gluten-free.
The chunks of dark chocolate with the addition of tart, crunchy dried raspberries take this granola to the next level! Together they make a wonderous bite!

This recipe comes together so quickly! All you need is to combine the base ingredients together in a bowl, spread the oat mixture evenly onto a baking pan and bake in the oven until golden brown and toasted.

Notes
  • Make sure to add in the chocolate chunks and raspberries when the granola is completely cooled. This will ensure the chocolate does not melt and the frozen dried raspberries don’t gain the moisture.
  • If you don't find dried raspberries, feel free to add any other dried fruit of your choice. You could also add fresh raspberries to your granola before you eat it!
  • This granola can be stored in an airtight container for up to 2 weeks at normal temperature-if it lasts that long.

Ingredients:
  • 2 cups old fashioned oats
  • 1/2 cup shredded dried coconut
  • 1/2 cup sliced almonds
  • 1 tablespoon unsweetened cocoa powder
  • Pinch of salt
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 cup dark chocolate chunks or chips
  • 1/3 cup freeze-dried raspberries
Instructions:
  1. Preheat oven to 160°C and line a baking sheet with parchment paper. Set aside.
  2. In a large mixing bowl, combine the oats, shredded coconut, the sliced almonds, salt and the cocoa powder. Stir to combine.
  3. Pour in the oil, maple syrup and the vanilla extract. Stir the mixture with a large spoon to ensure all of the ingredients are incorporated and coated evenly.
  4. Transfer the mixture to the lined baking sheet. Using a spatula spread into an even thin layer.
  5. Bake for 25-30 minutes tossing the granola halfway through, until the granola is lightly toasted and fragrant.
  6. Then, remove for the oven and let it cool down completely.
  7. Sprinkle the chocolate chunks and raspberries over the cooled granola. Gently toss to combine. Transfer the granola to an airtight container and store at room temperature for 1 to 2 weeks.
