With Easter weekend just around the corner, I am sure most of you have got your hands full with the last-minute preparation. If you looking for an easy yet impressive appetizer to entertain your guests, then you have to try these Brie Raspberry Bites.

Flaky puff pastry filled with creamy gooey brie cheese and a hint of sweetness from the raspberry sauce, topped with chopped pecans and fresh sprigs of rosemary- these festive yet flavorful bites make the perfect start to the Easter meal.
Baked till golden crisp, every morsel of these Brie Bites has the perfect blend of flavors and screams deliciousness! These are a total game-changer in any party and get polished off in minutes!
Though these may look super fancy, you only need 4 ingredients to make this appetizer: Puff pastry sheet, brie, raspberry sauce and pecans, and no one will know how easy they were to put together.

Can I make these Brie Bites ahead of time?

These bites are best served fresh from the oven. You can fully assemble the bites in the muffin pan ahead of time and pop them in the oven right before your guests arrive!

Notes
  • To make the brie easier to slice into pieces, pop it in the freezer for 10 minutes before you cut it.
  • I love the raspberry sauce with brie because of the contrast in flavors, but you can also use cranberry or strawberry jam!
  • You can also use chopped walnuts instead of pecans.
  • These brie bites can be stored in an airtight container in the fridge for up to 3 days.

Ingredients:
  • 2 sheets puff pastry
  • 220 g brie cheese
  • 1 cup raspberry sauce
  • ¼ cup pecans or walnuts, chopped
  • 24 fresh rosemary sprigs, optional
Instructions:
  1. Preheat the oven to 190˚C.
  2. Unroll the puff pastry sheet onto a lightly floured surface, and cut it into 24 equal squares. Each square will be about 2.5 inches in size.
  3. Spray a mini muffin pan with non-stick spray, and gently press a puff pastry square into each cup.
  4. Cut the brie cheese into 24 pieces and place one brie piece into the center of each puff pastry cup.
  5. Top with 1 teaspoon of raspberry sauce and chopped pecans.
  6. Place the muffin tin in the oven and bake for 15 minutes or until the puff pastry is puffed and golden.
  7. Take the muffin pan out of the oven, and let the brie bites cool for 5 minutes.
  8. Transfer to a serving platter and garnish with fresh sprigs of rosemary. Enjoy!
