One Pot Creamy Chicken Pasta

I have just come back from a short vacation from Heidelberg, one of Germany's most charming and picturesque cities. And let me tell you, leaving the clear blue skies, the sunny weather, the romantic old cobbled streets, the mesmerizing nature, and coming home to the daily grind of life is quite a challenge.

One-pot meals come to my rescue whenever an endless list of daunting tasks awaits me, and the last thing I want to do is spend a lot of time in the kitchen. This One Pot Creamy Chicken Pasta redefines the meaning of easy cooking. All you need to do is throw everything in, and you’ll have a delicious and fancy meal in less than an hour without leaving behind an overflowing sink of utensils.

Tender chicken pieces and pasta simmered in a rich, creamy tomato sauce-this dish is comforting, satisfying, and so delicious that you will want to lick the sauce off your plate.



The pasta gets cooked in the actual sauce, instead of just pasta water which doubles the flavor.

I like to use penne pasta for this recipe as it absorbs all of that delicious sauce. You can also use any other type of pasta like rigatoni, macaroni, or fusilli- the choice is yours! The small shapes absorb all of that delicious creamy sauce and deliver all the flavors in a single bite.

Ingredients:
  • 2 Boneless Chicken breasts, diced into bite sized pieces
  • 2 ½ cups Penne pasta
  • 1 red bellpepper
  • 1 green bellpepper
  • 2 Medium sized onions,chopped
  • 3 Tbsp Olive oil
  • 3 cloves garlic, minced
  • 1 tsp Red chili powder
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning (Mixed herbs)
  • 1 cup Tomato sauce
  • 3 cups Milk
  • 1 cup grated Mozzarella/Cheddar cheese
  • Fresh basil for garnishing

Instructions:
  1. To a large pot or skillet, add the olive oil and heat over medium heat.
  2. Add the chopped onions and cook until they become translucent. Then add, the minced garlic and cook for 2-3 minutes.
  3. Add chicken breast to the pot and cook it for 4-5 minutes.
  4. Add the red chili powder, the Italian seasoning, the salt and pepper. Keep stirring so that the spices are properly mixed.
  5. Add the bell peppers and cook for 1-2 minutes.
  6. Pour in the tomato sauce and keep stirring the mixture. Then pour in the milk and bring it to a boil.
  7. Add in the uncooked pasta, cover and cook for 10-12 minutes or until the pasta gets cooked and the sauce is thick.
  8. After 10 minutes, add 1 cup of mozzarella/cheddar cheese on top and cover and cook for 2 minutes.
  9. Garnish with basil and serve hot.
