Thai Pineapple Fried Rice

My love affair with fried rice goes back a long way, and I am unapologetic about it. It's my ultimate comfort food. A warm bowl of fried rice brightens up my day no matter how bad it is.

During my university days in Ireland, when I was trying to settle in and embrace the new culture, I had the pleasure of knowing a friend who was born and raised in Thailand. As my friendship with her grew stronger, I got to know more and more about their food, their habits, and their culture. When she introduced me to their classic Pineapple Fried Rice, it inspired me to create a version at home.


With fluffy grains of rice,prawns,colorful veggies, and sweet pieces of pineapple all tossed in a sweet and savoury sauce,this Pineapple Fried Rice is hearty enough to be a complete meal in itself.Eating this gorgeous and luscious fried rice will be like taking a trip to Thailand.


A key element to achieving the perfect fried rice is to use overnight chilled rice. Chilled leftover rice doesn't clump together, and gets coated in the sauce more evenly.

Ingredients:
  • 4 cups cooked rice
  • 200 g shrimp,peeled and deveined
  • 3 eggs, beaten with pinch of salt and pepper
  • 1 cup pineapple
  • 70 g diced carrots
  • 100 g green peas
  • 1 teaspoon soy sauce
  • 3 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 5 cloves garlic,minced
  • 1/2 teaspoon ginger,minced
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon honey
  • 1/4 cup raw cashews
  • 4 tablespoon cooking oil

Instructions:
  1. Combine shrimp,1 tsp soy sauce and 1/8 tsp black pepper in a mixing bowl and let it marinate while prepping other ingredients.
  2. In a small bowl mix together 3 tbsp soy sauce,honey,curry powder and the remaining pepper and set aside.
  3. Heat a large skillet over high heat and add 1 tbsp cooking oil.Pour beaten eggs into the skillet and scramble the eggs until just cooked. Remove the scrambled egg and set aside.
  4. Heat 1 tbsp oil,sear and cook the marinated shrimp for abou 2-3 minutes.Remove the shrimp from the skillet and set aside.
  5. Heat the skillet over high heat, add 2 tbsp oil,garlic and ginger.Stir fry for 30 to 45 seconds.Now, add the carrots,green peas and cashews.Stir fry for 1 minute,then add the rice and the sauce mixture.Stir fry everything together until every single grain of rice is coated with the sauce.
  6. Finally add the pineapple chunks,the fried shrimp,the fried egg and mix together.
  7. Serve warm and enjoy! .
