Thai Pineapple Fried Rice
My love affair with fried rice goes back a long way, and I am unapologetic about it. It's my ultimate comfort food. A warm bowl of fried rice brightens up my day no matter how bad it is.
During my university days in Ireland, when I was trying to settle in and embrace the new culture, I had the pleasure of knowing a friend who was born and raised in Thailand. As my friendship with her grew stronger, I got to know more and more about their food, their habits, and their culture. When she introduced me to their classic Pineapple Fried Rice, it inspired me to create a version at home.
With fluffy grains of rice,prawns,colorful veggies, and sweet pieces of pineapple all tossed in a sweet and savoury sauce,this Pineapple Fried Rice is hearty enough to be a complete meal in itself.Eating this gorgeous and luscious fried rice will be like taking a trip to Thailand.
A key element to achieving the perfect fried rice is to use overnight chilled rice. Chilled leftover rice doesn't clump together, and gets coated in the sauce more evenly.

Ingredients:
- 4 cups cooked rice
- 200 g shrimp,peeled and deveined
- 3 eggs, beaten with pinch of salt and pepper
- 1 cup pineapple
- 70 g diced carrots
- 100 g green peas
- 1 teaspoon soy sauce
- 3 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 5 cloves garlic,minced
- 1/2 teaspoon ginger,minced
- 1/2 teaspoon curry powder
- 1/4 teaspoon black pepper
- 1 tablespoon honey
- 1/4 cup raw cashews
- 4 tablespoon cooking oil
Instructions:
- Combine shrimp,1 tsp soy sauce and 1/8 tsp black pepper in a mixing bowl and let it marinate while prepping other ingredients.
- In a small bowl mix together 3 tbsp soy sauce,honey,curry powder and the remaining pepper and set aside.
- Heat a large skillet over high heat and add 1 tbsp cooking oil.Pour beaten eggs into the skillet and scramble the eggs until just cooked. Remove the scrambled egg and set aside.
- Heat 1 tbsp oil,sear and cook the marinated shrimp for abou 2-3 minutes.Remove the shrimp from the skillet and set aside.
- Heat the skillet over high heat, add 2 tbsp oil,garlic and ginger.Stir fry for 30 to 45 seconds.Now, add the carrots,green peas and cashews.Stir fry for 1 minute,then add the rice and the sauce mixture.Stir fry everything together until every single grain of rice is coated with the sauce.
- Finally add the pineapple chunks,the fried shrimp,the fried egg and mix together.
- Serve warm and enjoy! .
