Being someone who tries to take on more than one should, I know what it’s like to keep several balls in the air. I constantly keep striving for balance and at times, finding the time to pause becomes a herculean task. A friend of mine once said, "If you want to find the balance, you have to make peace with imperfections". How true!

Just like our lives, the food we consume also needs a balance. The Mexican-inspired Chicken Burrito Bowl is the perfect example of a healthy, hearty meal that is filled with a balance of nutrients and, at the same time bursts with flavors. A burrito bowl is a deconstructed burrito without the tortilla. It has all of your favorite burrito-filling ingredients served over a bowl of rice. Loaded with juicy, grilled chicken, rice, black beans, corn, this recipe is perfect for a quick lunch or dinner any day of the week. These bowls can easily be meal prepped for the week or turned into an easy freezer meal.

I love how colorful these bowls are — the bright red tomatoes, the green avocado, the yellow corn, and the pop of green from the cilantro.

The best part is that this bowl is completely customizable and a great fit for the whole family! You can put anything and everything into a burrito bowl, but here are some of my favorite additions:

  • White rice is a source of carbohydrates that provides us with quick energy. And if you want to go that extra step and make it even healthier, you can use quinoa or brown rice instead.
  • I have used chicken as the protein since it is low in fat and lean. You can also use ground beef, ground turkey, or even tofu if you want to make it vegetarian.
  • Black beans are a great source of fiber, protein, and antioxidants.
  • Avocados are a rich source of antioxidants and monounsaturated fats that keep the heart healthy.

    Ingredients:
    • 2 Boneless, Skinless Chicken Breasts
    • 2 Tbsp Olive oil
    • 1 Tbsp Fresh lime juice
    • ½ tsp Ground Cumin
    • ¼ tsp Chili Powder
    • ¼ tsp Garlic Powder
    • ¼ tsp Onion Powder
    • ¼ tsp Dried Oregano
    • Salt and pepper, to taste
    • 1 Cup Cooked Brown Rice/ White Rice
    • 1 Small Avocado sliced,cut into half
    • ½ Cup Black Beans
    • ½ Cup Green and Red Bell Peppers
    • ½ Cup Canned corn
    • ⅓ Cup Cherry Tomatoes, cut into small pieces
    • 2 Tbsp Greek yogurt
    • ½ Red onion diced
    • Chopped cilantro, to garnish

    Instructions:
    1. To prepare the chicken marinade, mix the olive oil, lime juice,salt, black pepper, cumin powder, onion powder, garlic powder,chilli powder and oregano.
    2. Add the chicken to the marinade, and marinate for at least 30 minutes or up to 8 hours.
    3. Heat a skillet over medium-high heat. Add chicken and cook for about 5-7 minutes on each side, or until cooked through.
    4. Chop the cooked chicken into slices.
    5. In a small bowl, mix cooked rice with lime juice, chopped cilantro, salt, and freshly ground black pepper.Toss to combine then set aside.
    6. Divide the rice between 2 bowls. Arrange the chicken, beans, corn,chopped bell peppers,onion, chopped tomatoes, avocado and yogurt. Garnish with chopped cilantro and serve .
