Apple French Toast Roll-Ups
For most of us, Sunday is a fun day-a day to spend time with our family and loved ones and create marvelous memories together. I believe that the fondest memories are made when gathered around the table.
On Sunday mornings, when we do have the time to slow down, my husband and I try to give each other undivided attention. We talk about the beautiful times that we have spent, our childhood memories, or plan for our next trip, though most of the time, the conversations turn into monologues, with me being the only one speaking. Needless to say, I am the talkative one in our marriage and never run out of words.
The recipe that I am sharing today is one of my favorites, especially when we have friends coming over. On the weekends, when the pressure to get everyone out of the door is not there, why not use the time to whip up this indulgent breakfast for the family? With just a handful of ingredients, these Apple French Toast Roll-Ups are gorgeous to look at, and delicious to eat. Golden, caramelized toasts outside and soft inside with a filling of apple cinnamon mixture, they are perfect for lazy weekends when you want to treat yourself.
The great thing about these rolls is that you can customize the filling to whatever you and your family love. I love to fill them with apple and cinnamon, a match made in heaven. Here are some of the other delicious filling options:

Ingredients:
- 2 medium apples, peeled, cored and cut into small pieces
- 1/2 tsp cinnamon
- 2 tsp lemon juice
- 2 eggs
- 3 tbsp milk
- 8-10 slices of white bread
- 4 tbsp soft cream cheese
- 1/3 cup sugar
- 1 tsp ground cinnamon
- 2 tbsp butter, for cooking
Instructions:
- Place the apple pieces, cinnamon, and lemon juice in a small saucepan. Cook over low heat for about 5 minutes, until apples start to soften. Transfer apples into a bowl and set aside to cool until ready to use.
- Remove the bread crust, and use a rolling pin to flatten up the bread slices.
- Spread the cream cheese evenly on each slice of bread, add about 1-2 tsp of apples and roll up each side.
- In one bowl beat the eggs, add the milk and mix well.
- In another bowl combine the sugar with the rest of the ground cinnamon and set aside.
- Heat a non-stick pan over medium heat and melt about 1 tbsp of butter.
- Dip each roll in the egg mixture and cook each side gently until golden brown. Cook 3-4 rolls at a time.
- Roll them into the sugar-cinnamon mixture.
- Serve warm with honey or maple syrup(if desired).
