Banana Nutella Crepes

Having grown up, watching movies, I have had always idolized Paris as the city of love. So, when in 2014, I visited Paris, it was like a dream-come-true moment for me. The Eiffel Tower twinkling in the night was the most romantic spectacle I had ever seen. After a delectable dinner, when the quest for having a dessert had intensified, I discovered that almost every street in Paris had a creperie waiting to serve a piping, hot crepe. Watching the crepes being cooked, whirled, and filled right in front of my eyes was a visual treat. The delicate, fluffy, crepes served with warm chocolate sauce, it was love at first bite!. Crepes are soft, thin, and delicate French-style pancakes typically served for breakfast or dessert. So, what's in a basic crepe recipe? Traditionally, French crepes are prepared with just four basic ingredients, such as flour, milk, eggs, and butter. They are served with different sweet and savory toppings, but I normally

Summer Corn Salad

Some foods have the power to flood us with memories. They remind us of joyful times, emotional memories of people and places from our past. One such food is corn on the cob,(or Bhutta as popularly called in India)that continues to linger on my taste buds and fondly reminds me of the best days of my life. With the first monsoon rain falling on dry earth came the most pleasant fragrance of the entire universe. Growing up, my fondest memories of the monsoon have to be the charcoal-roasted corn on cobs from an old lady who sold them near our house on rainy evenings. Biting into the crunchy cob of corn roasted on an open fire, smeared with lemon juice, and salt, while watching the rain through the window was pure magic to all senses. Now, enough of going down the memory lane, lets come back to the present. It is officially summer here and no summer barbeque party is complete without corn. On warm, sunny days I love to have salads with refreshing flavors that I can whip up in

Easy Overnight Oats

Image
Skip to Recipe Anyone who has read my previous posts will know that I am a huge fan of oats. Most of the weekdays, I like to start my day with a bowl of warm oatmeal. But as the summer months draw closer, I make the switch from a warm bowl of oatmeal to a pre-packed jar of overnight oats. These overnight oats are enticing enough to get even a late riseršŸ˜‰out of bed. What is Overnight Oats? Overnight oatmeal is a make-ahead breakfast option that is prepared the night before, giving you an instant healthy breakfast the next morning. It is easy to prepare(no cooking involved!) and perfect for those hectic mornings when you don't have the time to make breakfast. To make overnight oats, we need to soak rolled oats in milk and yogurt overnight that gives it the soft, creamy texture. In the morning, you can add your favorite toppings-fresh fruits and nuts and your healthy, satisfying breakfast is ready to rock.

Quick Coconut Chickpea Curry

Image
We all need some spice in our life. But I believe that we need to spice up our food and excite our tastebuds as well. For me, there is nothing better than a bowl of warm curry and rice. The very thought of eating curry gets my pulse racing and makes me run to the kitchen. The recipe that I am sharing today is simple, easy and you will be able to dish this up in no time. This Coconut Chickpea curry is a rich curry with tomatoes, coconut cream, and the perfect blend of Indian spices . It comes together in 40 minutes and is great for vegans. It is also very nutritious and filling as it contains protein from the chickpeas and iron from the spinach. The coconut milk brings a subtle sweetness and creaminess to the dish. The magic ingredient in this recipe is the curry powder. Curry powder is made with cumin, coriander, turmeric, and ground ginger. I love the addition of spinach, but you can make the curry without the spinach and it would taste equally delicious.  I

Hungarian Goulash Soup

Image
People like to travel for endless reasons. What I like about traveling is that it allows me to try and appreciate new food. A few years ago, I took a trip to Hungary. It suddenly started raining and I went inside a restaurant. As I was sitting in the restaurant, I glanced over the menu and a soup named"Goulash" caught my attention. I was so intrigued by its name that I decided to give it a try. It was delicious!! Few months ago, I tried this recipe at home and it came out pretty well. Since then it has become a favorite in my home. The Hungarian Goulash is a stew or soup made with tender beef, potatoes, and onions, slowly cooked in an incredibly rich broth. It can be the perfect starter to lunch, or it can serve as a meal on its own. I have served this soup with a side of crusty bread for dipping.  Are you looking for other soup recipes? You can also check out my Roasted Tomato and Red Pepper Soup

Banana Oats Pancakes

Image
I have tied the knot with someone whose eating habits are drastically different than mine. I want my food healthy, whereas my husband prefers to indulge and struggles with healthy alternatives. Every Sunday morning I wake up to the sound of my dear husband asking me to make him pancakes. Though I too love pancakes, I somehow end up feeling guilty after having them. The regular pancakes are high in carbohydrates and add to our daily calories without offering any nutritional value. I am a firm advocate of having oats when it comes to breakfast. So, I tried my hands at making healthy pancakes using rolled oats and bananas and the result was amazing! The Banana Oats Pancakes are an easy, healthy, and delicious breakfast that you can feel good about giving your family. These pancakes are made with just 3 ingredients-rolled oats, ripe bananas, and milk. Though most of the pancake recipes use eggs, I have substituted eggs with bananas. They would not only act as a binde
