Mexican Chicken Fajitas
Few things in life bring me as much happiness as good food. Hence, I am always on the lookout for exotic flavors and international cuisines. The vibrant, flavourful, and delicious taste of Mexican food has made me fall in love with this cuisine. This Mexican Chicken Fajitas comes to our rescue on those busy weekdays when we don't have the time or the energy to cook dinner. It is a classic, one-pan meal made with tender, juicy chicken breast, an assortment of bell peppers, and onions tossed in an easy homemade seasoning. How you serve the chicken fajitas is up to you. You can serve these chicken fajitas in some homemade flour tortillas or with some Mexican rice, I enjoyed mine with homemade guacamole and tomato salsa.

Mexican Chicken Fajitas
Ingredients
Chicken Fajitas
- 3 boneless chicken breast
- 2 bell peppers, thinly sliced
- 1 onion, thinly sliced
- 2 tablespoons olive oil
- 1/2 lemon
Fajita Seasoning
- 1/2 tablespoon ground cumin
- 1/2 tablespoon chili powder
- 1/2 teaspoon paprika
- 3 cloves garlic, minced
- 1/4 teaspoon pepper
- salt to taste
Instructions
- Add all the fajitas seasoning ingredients to a small mixing bowl and stir together.
- Cut chicken into strips and toss with fajita seasoning mixture.
- Heat the oil in a skillet over medium heat. Sear the chicken strips for 6-7 minutes till they are cooked. Then, remove them from the pan and let the chicken rest for a few minutes.
- Saute the bell peppers and onion in the same skillet over medium heat for 4-5 minutes, stirring frequently.
- Put the chicken back into the skillet, add a squeeze of fresh lime juice, and stir everything together.
- Serve immediately with tortillas or Mexican rice or guacamole.
