Summer Corn Salad
Some foods have the power to flood us with memories. They remind us of joyful times, emotional memories of people and places from our past. One such food is corn on the cob,(or Bhutta as popularly called in India)that continues to linger on my taste buds and fondly reminds me of the best days of my life. With the first monsoon rain falling on dry earth came the most pleasant fragrance of the entire universe. Growing up, my fondest memories of the monsoon have to be the charcoal-roasted corn on cobs from an old lady who sold them near our house on rainy evenings. Biting into the crunchy cob of corn roasted on an open fire, smeared with lemon juice, and salt, while watching the rain through the window was pure magic to all senses.
Now, enough of going down the memory lane, lets come back to the present. It is officially summer here and no summer barbeque party is complete without corn. On warm, sunny days I love to have salads with refreshing flavors that I can whip up in a flash. With so much fresh corn in the market this time of the year, I usually make a salad that takes advantage of this sweet vegetable. The recipe that I am sharing today is simple, quick, and screams summer.
This Corn Salad combines sweet corn, cucumbers, red onion, and tomatoes with a cilantro-lime dressing to make a quick and refreshing side dish for summer! You can store it in the refrigerator for at least 2-3 days and is perfect for passing at potlucks, serving as a side dish, or enjoying as a full meal on its own.
If you are not a salad person and find it tedious, give it a try, and I am sure this will become your new favorite.
Ingredients:
- 3 cups corn kernels
- 1 cup cucumbers, diced
- 1 cup cherry tomatoes, quartered
- 1 cup diced red onion
- 2 tablespoons extra virgin olive oil
- 1/2 cup cilantro, finely chopped
- 1/4 cup lime juice(about 1-2 limes)
- 1/2 teaspoon red chili flakes
- salt and pepper, to taste
Instructions:
- Boil the corn for a few minutes. Once boiled, remove the kernels from corn.
- Add the corn, tomatoes, cucumbers, and red onion to a large bowl and set aside.
- Combine all the dressing ingredients(olive oil, cilantro, lime juice, red chili flakes, salt and pepper) into a small bowl and whisk until incorporated.
- Pour the dressing over the corn salad and mix well to combine.
- Season to taste and enjoy!
