As the weekend rolls around, the favourite dishes from the takeaway menu call louder than ever. However, making them yourself will help you save money and impress your entire family at the dinner table.

Chicken Lo Mein is one such classic dish that we always love to order again and again. Today, I will share my version of the recipe that hits the spot when you’re craving Chinese take-out, except this version is quicker, tastier and a lot healthier.
Stir-fried vegetables, tender pieces of chicken and egg noodles are tossed in a flavorful savory sauce to create the most satisfying Chicken Lo Mein.

DIFFERENCE BETWEEN LO MEIN AND CHOW MEIN

Lo Mein and Chow Mein are two Chinese noodle dishes that are sometimes used interchangeably. While both of them have similar ingredients, the key difference lies in the way they are cooked.
Chow Mein refers to stir-fried noodles, while Lo Mein means tossed noodles.

In Chow Mein, the noodles are first boiled, then pan-fried along with tons of veggies and protein until they are crispy and slightly golden. Lo Mein, on the other hand, involves tossing the boiled noodles in a sauce with the vegetables and the protein.

RECIPE VARIATIONS

You can customize this recipe with your own spin! Here are a few suggestions for you:
  • PROTEIN: If you are not a fan of chicken, you can use any other protein, like beef, pork, shrimp, scrambled eggs, tofu or you can omit the protein all together.
  • VEGGIES: Feel free to use other vegetables like brocolli, boy choy, bean sprouts, cabbage, etc.
  • NOODLES : If you do not find egg noodles, you can use rice noodles or pasta noodles like spaghetti, linguine. It will not be traditional, but it will still taste delicious.

Ingredients:
    For the Noodles
  • 450 g fresh egg noodles
  • 300 grams of chicken breast, cut into thin strips
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon fresh ginger, grated
  • 3 cloves of garlic, minced
  • 2 Tablespoons vegetable oil
  • 1 large onion, thinly sliced
  • 2 medium carrots, julienned
  • 1 red bell pepper, sliced
  • 10 shitake mushrooms, sliced
  • 20 snap peas
  • White sesame seeds, for garnish

  • For the Lo Mein Sauce
  • 1/2 chicken stock or water
  • 2 Tablespoons oyster sauce
  • 2 Tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1 teaspoon brown sugar

Instructions:
  1. Slice the chicken breasts into thin strips. Then add them to a bowl, along with the grated ginger, minced garlic, salt and black pepper. Mix well and set aside.
  2. Add the ingredients for Lo Mein Sauce in a medium-sized bowl and stir together until the sugar dissolves.
  3. Bring a pot of salted water to a boil and cook the noodles until they are 80% done. Drain completely. Do not overcook the noodles otherwise they will turn soggy when you finish them in the wok/ frying pan with the Lo Mein Sauce.
  4. Heat a wok or frying pan over medium-high heat and add 1 Tablespoon vegetable oil. Add the marinated chicken pieces and cook for 5-6 minutes until they are cooked through, remove them from the pan and set them aside.
  5. To the same pan, heat 1 Tablespoon vegetable oil over medium heat.
  6. Add the sliced onions and cook until it becomes soft and translucent. Then, add all the vegetables- carrots, snap peas, mushrooms, red bell pepper and stir fry for 2 to 3 minutes or until tender but crisp.
  7. Add the boiled noodles along with the prepared Lo Mein sauce and the fried chicken pieces to the pan. Fry everything on a high heat and toss to combine. Garnish with white sesame seeds.
  8. Serve and enjoy!
