We all have our list of favorite food from popular chain restaurants, fast food joints and cafes that we just can’t get enough of and keep going back. Chicken Tenders! Who doesn’t love crispy strips of chicken in the perfect crunchy coating? They are loved by everyone and I am not an exception. But as delicious and tempting as they are, they come with plenty of unwanted sodium and saturated fats.

Bid farewell to the drive, the wait and make these Crispy Chicken Tenders at home for a fraction of the cost and without all the hassle of deep frying.

WHAT TO SERVE WITH THESE CHICKEN TENDERS

Enjoy these Chicken Tenders with your favorite dipping sauce like mayo sriracha, honey mustard, ranch dressing, BBQ sauce, or even ketchup! Pair them with some French fries and/or coleslaw and you've got yourself your favorite fast food meal right at home.

You can also serve these chicken tenders on top of a fresh salad or stuff them inside a flour tortilla with tomato, lettuce and cheese for a delicious and filling wrap.

The secret of getting crispy Chicken Tenders is crushed cornflakes. Coating the chicken in crushed cornflakes provides the perfect crunch and the perfect golden colour (which is difficult to get using panko breadcakes) you’d get with fried chicken.

HOW TO REHEAT THE LEFTOVERS?

These chicken tenders taste best when freshly cooked. However, if you have leftovers, I won't recommend reheating them in the microwave because the chicken would quickly get soggy. The trick here is to reheat them in the oven so that they retain their moisture.
Place the leftovers on a baking tray in a single layer in the preheated oven at 180 degrees Celsius and reheat for 12- 15 minutes until hot throughout.

Ingredients:
    For the Chicken Tenders
  • 4 chicken breasts, cut into strips
  • 1 Tbsp paprika powder
  • 1 Tbsp garlic powder
  • 1 teaspoon salt
  • 1 Tbsp black pepper
  • 80 g all purpose flour
  • 2 eggs, whisked
  • 180g Cornflakes
  • Cooking oil, to spray

  • For the Mayo Sriracha Dipping Sauce
  • 1/2 cup mayonnaise
  • 1 1/2 Tablespoon sriracha sauce
  • 1 teaspoon honey

Instructions:
  1. In a zip lock bag or food processor, crush the cornflakes to a texture similar to Panko breadcrumbs and set aside.
  2. Preheat the oven to 200 degrees Celsius and line a large baking sheet with parchment paper.
  3. In a shallow bowl, add the salt, black pepper, the garlic powder and the paprika powder and mix together. Add the chicken strips and allow them to marinate for 10 mins.
  4. In a bowl, add flour, in the 2nd bowl, add the whisked eggs and the 3rd bowl, add the crushed cornflakes.
  5. One by one dip the chicken pieces in the flour mixture, followed by the egg mixture and then finally in the crushed cornflakes- ensuring you thoroughly coat them at each stage. Repeat the same with all the remaining chicken strips.
  6. Place the chicken strips on the prepared baking sheet in a single layer.
  7. Spray some cooking oil on top of the chicken pieces and bake for 20-25 minutes, until they are fully cooked through and are golden and crispy.
  8. Serve the chicken tenders with this mayo sriracha sauce or any other dipping sauce of your choice.
  9. Enjoy!
