Winter is a difficult time to eat healthy, thanks to all of those desserts even post the holidays. So here is a recipe that would ease your way back into the reset routine while satisfying your sweet cravings.
These Healthy No-Bake Brownies have a luscious fudgy texture, intense chocolate flavour and taste sinfully decadent. They’re everything a traditional brownie should be, except they are healthier and don’t require to be baked.

Plus, they are naturally gluten free, refined sugar-free and vegan. The perfect treat that can be enjoyed any time of the day!

Recipe Tips and Tricks
  • If you're using dried dates (that are already pitted), soak them in boiling water for 10 minutes. Drain the dates very well before using them in the recipe.
  • Feel free to use slightly different ratios of each of the nuts depending on what you have on hand.
  • If you want you can keep the melted dark chocolate off the top, these brownies will still taste incredibly delicious.
  • These brownies will stay good for about 1 week when kept covered in the fridge .

Ingredients:
  • 1 cup packed pitted Medjool dates
  • 1/4 cup walnuts
  • 1/4 cup pecans
  • 3 Tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 50 gm Dark chocolate
  • Chopped pistachios, to garnish
  • Chopped dried cranberries, to garnish
  • Sea salt,to garnish

Instructions:
  1. Add the dates, walnuts, pecans to the bowl of a food processor.
  2. Next add in the cacao powder, and vanilla extract. Process the mixture until it forms a soft dough.
  3. Add the mixture into a 8x4 inch loaf pan lined with parchment paper, pressing evenly towards the sides of the pan.
  4. Melt the dark chocolate using a double boiler method or in the microwave.
  5. Spread the chocolate frosting evenly on the set brownie mixture.
  6. Garnish the brownie mixture with chopped pistachios and dried cranberries.
  7. Allow the brownies to cool in the fridge for at least 20 minutes.
  8. Once ready to serve, sprinkle some coarse sea salt on top and then using a sharp knife cut the brownies into 8 squares.
  9. Enjoy!
