Black Bean & Corn Salsa, also known as Cowboy Caviar or Texas Caviar is a mash-up between a salad and a dip. Black beans, crunchy bell peppers, corn, red onion, avocado, and fresh cilantro are all tossed together in a zesty homemade dressing!
With its crunchy textures and bright fiesta flavors, this is not only delicious but can also be whipped up in no time! Just chop all the veggies, dump in your black beans and corn, and your salsa is practically made – no special skills required!

You can store the leftovers in an air-tight container in the fridge for 2-3 days.


Extra Notes
  • Remember that avocados start to turn brown over time when exposed to the air, so make sure to add them to the salsa before serving and eating.
  • This salsa can be enjoyed right away, but it tastes best when you allow it to sit for at least 20 minutes in the refrigerator before you plan to serve it so that all the flavors can come together. I know it’s tempting to dive right in but trust me on this one!
  • As the salsa sits, the veggies will release liquid, and much of the dressing will sink to the bottom of the bowl. For the best flavors, stir the salsa well right before serving.
  • If you want to make this for a crowd, you can simply double or triple the ingredients. Prepare this ahead of time and serve for stress free entertaining without the last minute hassle.

Ingredients:
  • 1 can black beans, rinsed and drained
  • 1 cup corn, fresh or canned
  • 1/2 cup cherry tomatoes, halved
  • 1 avocado, chopped
  • 2 red bell peppers, seeded and finely diced
  • 2 red onions, finely diced
  • 1/3 cup cilantro leaves, chopped
  • 1/3 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder
  • Salt, to taste
  • Ground black pepper, to taste
  • Tortilla Chips(for serving)

Instructions:
  1. Place the black beans, tomatoes, bell pepper, red onion, corn, avacado and cilantro in a large bowl.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin powder, salt and black pepper.
  3. Drizzle the prepared lime dressing over the black beans and chopped veggies and mix until everything is well combined.
  4. Cover and keep in the fridge for at least 20 minutes or until ready to serve.
  5. Serve with a bowl of tortilla chips and enjoy!
