Almond Cookies
Winter is finally upon us, and so is the baking season. With the holiday season approaching, it is time to slow down, stay indoors, put on some festive tunes and whip up some delicious desserts together with the family.
Nothing says Christmas like a batch of freshly baked cookies straight from the oven. But sometimes we are looking for recipes that are easy and quick, and don't want the hassle of a long baking project. That's where these Almond Cookies come in. You can never go wrong with this fuss-free recipe!

Some Extra Tips
- Almond flour is typically made from blanched (peeled) almonds and has a fine powder texture. If you do not want to buy it, you can get out your food processor and make it yourself easily at home. Just add blanched almonds to a blender and blitz until you get a fine, powdery flour.
- The cookie dough can be made in advance and stored in the refrigerator for up to 3 days, and you can bake the cookies whenever a craving strikes.
- You can store the baked cookies in an airtight container at room temperature for up to 5-7 days.
Ingredients:
- 1½ cups all purpose flour
- ½ cup almond flour
- ½ tsp salt
- ½ tsp baking powder
- 1 egg
- 1 cup butter unsalted,at room temperature
- ¾ cup white sugar
- 1 tsp almond extract
- Sliced almonds, for topping
Instructions:
- Whisk together the flour, almond flour, baking soda, and salt. Set aside.
- Using a hand mixer, beat the butter until smooth and creamy.
- Add in the egg, almond extract and sugar. Mix until well combined.
- Gradually add the flour mixture, mixing just until combined.
- Cover the bowl of dough and place in the refrigerator to chill for 30 minutes.
- Preheat oven to 180°C. Line baking sheet with parchment paper.
- Using a small scoop, spoon out the cookie dough and place on baking sheet, gently press down the dough to flatten to about ½ inch thick, and top with sliced almonds.
- Bake for 10-12 minutes or until the edges of the cookies are lightly browned.
- Allow cookies to cool on the baking sheet for about 5 minutes then transfer to a wire rack to cool completely.
- Enjoy!
