What’s for dinner? This is the most asked question in our household. I must confess that as much as I love cooking, meal planning is something that is always on my dreaded chore list. Whenever I am too exhausted to cook or run out of fresh ideas, I try to stick with simple, reliable recipes that get my job done. I think the possibilities are endless when you have got pasta in the pantry. With a little imagination, you can put together a satisfying main dish by the time the pasta gets cooked.



Made with homemade, rich tomato sauce and topped with juicy shrimps, this Tomato Shrimp Pasta is a great way to spice up your weeknight dinner.



Cracking open a jar of store-bought sauce and pouring it into the pasta may seem very convenient to us on busy days. But, nothing beats the sauce that is made at home from scratch. It just tastes so much better and is healthier than the store-bought stuff. Roasting the tomatoes seems to concentrate their sweetness and elevates the flavors to another level.

So, the next time you want to add excitement to your weeknight meal, make this for your family, and I am sure you won't be disappointed.

Tip: If you don’t want to cook with wine, you can substitute the wine with broth.



Ingredients:
  • 400g spaghetti
  • 400g cleaned shrimp
  • 1 tsp dried chilli flakes
  • 1 cup dry white wine
  • 700g cherry tomatoes
  • 4 cloves of garlic, minced
  • 1 tsp dried oregano
  • 1 medium onion, diced
  • 3 tbsp olive oil
  • Salt and pepper, to taste
  • 1/3 cup fresh chopped parsley

Instructions:
  1. In a mixing bowl, place the tomatoes, diced onion, and olive oil. Season well with salt and pepper, toss everything together, spread on a non stick baking tray and bake for 20 minutes at 200°C. If you do not have an oven, you can simply heat some olive oil in a pan. Then add the tomatoes, onions, salt and pepper. Allow them to roast in the pan over low heat until they soften.
  2. Once roasted, place all ingredients in a high speed blender and blitz until smooth. Set aside for later.
  3. Place the cleaned shrimp in a small bowl with salt, pepper and chilli flakes, and toss until each side is coated. Set aside.
  4. Place a large pot of salted water for your pasta. Once the water starts boiling add the pasta and cook until al dente.
  5. Heat olive oil in a pan, add the shrimps, and cook until brown on each side. Remove from pan and set aside.
  6. Add minced garlic to the pan, deglaze with white wine. After that add the roasted tomato sauce and oregano. Stir and bring the sauce to a simmer till the sauce has thickened.
  7. Add the drained pasta, shrimp and chopped parsley. Toss everything together and serve hot.
