After a never ending gloomy winter, spring is finally here! While I love cozy soups and stews, during the cold days, switching over to fresh salads is one thing that I really look forward to around this time of the year .
Fresh strawberries have started making an appearance on the shelves of the grocery stores. Since the strawberry season is short, I try to make the most use of them. Apart from using them in my smoothies, I also love tossing them in my salads to give them a bright colour and a sweet flavor.
Say bye to boring salads! This Grilled Chicken Strawberry Salad is layered with grilled chicken, fresh stawberries,blueberries, mandarin oranges, iceberg lettuce, crunchy walnuts and drizzled with a homemade Poppy Seed Dressing. It is a cinch to whip up in just 30 minutes and perfect for a quick and filling lunch!

A light, healthy and vibrant salad with incredible flavors and textures! The best part about this salad is the Lemon Poppyseed Dressing. It is light, sweet and can transform boring greens to delicious bowls!

Even though you can find this dressing in the supermarket, sometimes it is loaded with a lot of preservatives, hence I prefer making it at home. It is prepared with simple ingredients that you mostly have in your pantry and keeps well in the fridge for a few days! This also makes a delicious drizzle for grilled or pan-seared chicken, salmon or shrimp.

Ingredients:
    For the Salad
  • 4 boneless skinless chicken breast
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 2 cups chopped romaine lettuce
  • 1/4 cup chopped strawberries
  • 1/4 cup Mandarin oranges
  • 1/4 cup blueberries
  • 1/8 cup salted toasted walnuts

  • For the Lemon Poppy Seed Dressing
  • 1/2 cup olive oil
  • 1/3 cup lemon juice
  • 2 tablespoons honey
  • 1 teaspoon dijon mustard
  • 1 tablespoon poppy seeds
  • A pinch of salt, to taste

Instructions:
  1. Season the chicken fillets with salt, pepper and garlic powder. Marinate for at least 15 minutes.
  2. Heat a skillet over medium-high heat. Add the chicken fillets and cook for about 5-6 minutes on each side, or until cooked through(don't overcook, or else they will become dry).Chop the cooked chicken into thin slices.
  3. To make the lemon poppy seed dressing, combine all the ingredients in a medium bowl and whisk well. Refrigerate until ready to serve.
  4. In a bowl, arrange washed, chopped romaine lettuce, strawberries, oranges, blueberries, the grilled chicken pieces, and the walnuts.
  5. When ready to serve, drizzle the poppyseed dressing over the salad and enjoy!
