After the overindulgence of Christmas, it is time to get on the healthy eating bandwagon and gear up for the new year with energy, zest, and a happy body.

I don't think that there is anyone who doesn't love a big stack of fluffy, melt-in-your-mouth pancakes for breakfast. But what if I tell you that you can have pancakes even when you're trying to follow a healthy diet.

The recipe is simple and uses basic kitchen staples. Let's talk of a handful of the ingredients:
  • Whole Wheat Flour- Since these pancakes are made with whole wheat flour, they are high in fiber, and leave you feeling full and satisfied for a long time!
  • Baking Powder and Baking Soda- The combination of the baking powder and the baking soda helps the pancakes rise and makes them fluffy.
  • Honey- These are naturally sweetened with honey instead of refined sugar. Feel free to substitute the honey with maple syrup.
  • Buttermilk- The buttermilk in the recipe not only adds a flavor to the pancakes but also helps activate the baking soda and/or baking powder in the batter, making them thick and fluffy.

Healthy Whole Wheat Buttermilk Pancakes

These pancakes taste great with a variety of add-ins. You can add top them up with chocolate chips, a handful of walnuts or pecans, sliced bananas, or even some powdered sugar. I love them with some fresh fruit and a drizzle of maple syrup. However, you serve them I’m pretty confident that you are going to love them!

Ingredients:
  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 3/4 cup buttermilk
  • 3 tablespoons vegetable, or melted coconut oil
  • 2 large eggs
  • 1/4 cup honey
  • 2 teaspoons pure vanilla extract

Instructions:
  1. In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt. Set aside.
  2. In another bowl, whisk together the buttermilk, honey, oil, eggs, and vanilla until fully combined.
  3. Add the dry ingredients to the wet ingredients and mix until just combined, making sure not to over mix the batter.
  4. Heat a large skillet on medium heat and lightly spray with cooking oil.
  5. Using a measuring cup, pour 1/4 of the batter onto the skillet. When the pancakes starts to bubble and the edges look set, flip and cook for another 1-2 minutes. Repeat with the remaining batter.
  6. Serve with pure maple syrup/honey, fresh fruit, or topping of your choice.
