As tempting as it may be to grab that packet of chips at that moment, you will regret that decision later on.

These naturally gluten-free muffins rely on regular pantry staples like oats, bananas, eggs, Greek yogurt, and honey. I have substituted the butter for Greek yogurt that makes them super moist and fluffy.
These oats muffins are such an easy way to enjoy a treat without feeling guilty. Whip up a batch of these over the weekend, and you will have a hearty snack that you can enjoy at any time of the day, as a healthy snack, or even for breakfast.

Some Extra Tips
  • Since the muffins are made with Greek yogurt, they need to be stored in the refrigerator. You can refrigerate them for up to 6-7 days in an air-tight container
  • For the best flavor, use very ripe bananas as they are the sweetest.
  • You can adjust the amount of honey in the recipe as per your taste.
  • I like adding the chocolate chips on top of the muffins before putting them in the oven. You can also leave them out if you don't like them. Even without the chocolate chips, these muffins are pretty sweet.




Ingredients:
  • 2 cups Rolled Oats
  • 3 ripe bananas
  • 1 cup Greek yogurt (or plain yogurt)
  • 2 eggs
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 cup chocolate chips
  • 2-3 tablespoons honey or maple syrup

Instructions:
  1. Preheat oven to 175 degrees C. Spray 12 cup muffin tin with nonstick cooking spray or grease them with some oil.
  2. Add the oats to a blender or food processor and blend until the oats resemble a fine powder.
  3. Mash the bananas in a small bowl with the back of a fork. Mash thoroughly.
  4. Add the mashed bananas, eggs, honey/maple syrup, yogurt,baking soda, baking powder, and vanilla extract to a large bowl. Stir until well combined. Add in the blended oats and stir until combined.
  5. Divide batter evenly into the prepared muffin tin, adding equal amounts to the 12 cavities, the cavities should be about 3/4 filled. Sprinkle each muffin with some chocolate chips and bake for 20-25 minutes or until toothpick comes out clean.
  6. Remove from the oven and let stand for 5 minutes before taking out the muffins from the tin.
  7. Enjoy!
