Every time I go grocery shopping, I end up buying a lot of bananas. They are a healthy snack and make a nice addition to a bowl of cereal, yogurt, and smoothie. However, they do not get eaten fast enough, and in the blink of an eye, that bunch of bananas on the kitchen counter turn brown and soggy. Last week, my husband was almost going to toss them out when I said at the top of my voice, ''Don't throw them, I'm going to bake some Banana Walnut Bread''. On hearing this, his eyes lit up like a kid on Christmas morning.

But this time, I wanted to make a healthier version. Made with 100%whole wheat and naturally sweetened with honey, this healthy Banana Walnut Bread tastes just as flavorful as the regular one.

Some Extra Tips for Making the Best Banana Bread
  • The key to making the best banana bread is to use very ripe bananas that have lots of brown spots on them. The riper the bananas, the sweeter is the bread.
  • You can swap the walnuts in the recipe with pecans or almonds.
  • If you are allergic to nuts or want to make this nut-free, you can add chocolate chips instead.

How to store the Banana Bread
  • If you don’t happen to finish all of the banana bread and want to save some for another day, you can cover it with plastic wrap and store it at room temperature for up to 4 days.

    Ingredients:
    • 1 3/4 cups whole wheat flour
    • ½ teaspoon ground cinnamon
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 2 eggs
    • 1/2 cup olive oil
    • 1/3 cup honey or maple syrup
    • 1/4 cup Greek yogurt
    • 1 teaspoon vanilla extract
    • 1 cup mashed bananas (about 3 medium bananas)
    • 1/2 cup chopped walnuts

    Instructions:
    1. Pre-heat oven to 170 degrees C. Line a 9 x 5 inch pan with parchment paper and grease the inside of the pan to prevent sticking.
    2. In a large bowl, mix together the mashed banana, eggs, honey, Greek yogurt, olive oil and vanilla extract until well combined.
    3. In another bowl, whisk together the dry ingredients: whole wheat flour, baking soda, cinnamon and salt. Add dry ingredients to wet ingredients and mix until just combined. Please do not overmix!
    4. Pour batter into the prepared greased pan. Bake for 50-55 minutes or until a toothpick inserted comes out clean.
    5. Allow bread to cool in the pan for 10 minutes, then remove and transfer to a wire rack to finish cooling.
    6. Enjoy!
