The holidays are gearing into full swing, and I am looking forward to some relaxing time at home along with some good food. Sometimes, even scrolling through the food pics on Instagram makes my mouth drool and my tummy rumble. There are so many tempting recipes that I want to try my hands at, but at the same time, I don´t want the holiday blues to derail my diet. Hence, I am always on the lookout for food that is healthy yet delectable.


I love potatoes unconditionally and in all forms- mashed, fried, baked. And why not? You can never go wrong with them – they’re nutritious, filling, and of course, delicious. The recipe today is for all those friends who share the same affinity for potatoes.


The Garlic Roasted Potatoes are crispy on the outside, creamy on the inside, and have a bold garlic flavor. Every bite is packed full of flavors.



It is easy to make, and most important of all, you can enjoy this appetizer without worrying about your waistline!

This is also a simple yet satisfying side dish that pairs well with just about anything- roasted chicken, grilled steak, or baked salmon.

Ingredients:
  • 1 kg Potatoes
  • 1/2 teaspoon baking soda
  • 4 tbsp Olive oil
  • Salt,to taste
  • 1/2 teaspoon black pepper
  • 4 cloves of garlic, minced
  • 1 tbsp finely chopped rosemary
  • 1/2 tsp Red chili powder (optional)

Instructions:
  1. First, wash the potatoes with skin and cut them into halves or you can cut them into quarters if you’re using bigger potatoes. .
  2. Boil water in a pan and then add the baking soda,salt and the potatoes to the boiling water.
  3. Now parboil the potatoes in the water for about 10 minutes.
  4. Heat olive oil in a pan, and then add the the minced garlic and chopped rosemary to the oil and fry them until slightly brown. Immediately strain the garlic infused oil through a fine-mesh strainer.
  5. When the potatoes are cooked, drain carefully and let them rest in the pot for about 30 seconds to allow excess moisture to evaporate.
  6. Transfer the potatoes to a bowl and then add the infused oil, red chilli powder(optional), season with little more salt and black pepper. Toss them until all the potatoes are evenly coated with the spices.
  7. Place a frying pan or a skillet on medium heat, add some of the infused oil to the pan and place the potatoes in the pan,fry them for 15-20 minutes until they get crispy, flipping them in every 5 minutes.
  8. If you are making these in an oven,transfer the potatoes on a rimmed baking sheet and spread them evenly. Bake them at 200 degrees for 40-45 minutes, until all of them are crispy and golden,flipping them often.
  9. Serve hot.
