Easter season is upon us! Whether you are planning to celebrate with your family, or you are entertaining a crowd, I am sure you would like to put on a spectacular and decadent spread. But why not serve your guests a tantalizing appetizer to nibble on after all that egg hunting and before they dig into the big feast.

Lightly toasted baguette slices, creamy mozzarella, ripe tomatoes, fresh basil and a drizzle of sweet balsamic glaze create an easy and quick appetizer. Perfect to serve at your next family dinner, holiday gathering, or even at a weekend brunch!
WHAT IS CAPRESE BRUSCHETTA?

Bruschetta (pronounced broo-sket-ta) is a slice of bread toasted in the oven or grilled, often rubbed with garlic and topped with extra-virgin olive oil, tomatoes and salt.
This Caprese Bruschetta is essentially an appetizer that features the flavors of the classic Caprese salad (tomatoes, mozzarella, basil) served on toasted bread with a drizzle of balsamic glaze.

Like most classic Italian dishes, the vibrant, fresh flavors shine through in this Caprese Bruschetta. Everyone will be super satisfied and will keep coming back for more.

Store the tomato mixture in an airtight container in the fridge for up to 2 days. You can make more bruschetta with it, add it to a pasta salad or even add it some to smashed avocado to make guacamole!
Store the bread slices separately in an airtight container at room temperature, and reheat in the oven at 200 degrees Celsius for 5 minutes to make them crispy again.

Here are a few tips to keep in mind while making this Caprese Bruschetta:

  • USE FRESH BREAD: Good quality ingredients go a long way in this recipe. French baguette will give you the perfect-sized bites for these Bruschetta. Grill the bread slices for a few minutes that gives them the crunch when you bite into them.
  • USE RIPE TOMATOES: It’s so important to use the freshest ripe tomatoes you can find to make bruschetta!
  • SERVE IMMEDIATELY: Toast the bread right before serving and do not top the bread slices with the tomato topping until right before serving or they will get soggy. If you’re serving them at a party and want guests to enjoy at their own pace, make it an assembly line. Place the tomatoes in a bowl with a slotted spoon next to the crostini and let them build their own.

Ingredients:
  • 1 large Baguette
  • 300 g fresh Mozzarella, sliced
  • 2 large ripe tomatoes, diced
  • 1/3 cup fresh basil, chopped
  • 1 large red onion, finely chopped
  • 2 Tablespoons garlic, minced
  • 4 Tablespoons extra virgin olive oil
  • Salt, to taste
  • 1/4 ground black pepper
  • 2 Tablespoons balsamic glaze

Instructions:
  1. Preheat the oven to 205°Celsius.
  2. Add the tomatoes, onion, fresh basil, 1 Tablespoon minced garlic and 1 Tablespoon olive oil to a large mixing bowl. Season with salt and pepper, stir gently to combine and set aside.
  3. To prepare the garlic infused oil, mix 1 Tbsp of minced garlic with 3 Tablespoons olive oil.
  4. Cut the baguette into 1/2” thick slices, slicing diagonally.
  5. Arrange them on a baking sheet and brush the garlic infused olive oil on both sides of the bread slices. Place the sliced mozarella on top of each bread. Bake them for 5 minutes, then broil on high heat for 1 to 2 minutes until the edges are golden brown and the cheese is melted.
  6. Top each bread slice with a heaping tablespoon of the tomato mixture, drizzle balsamic glaze on top and enjoy!
