Apple Jalebi
Lately, as I wake up in the mornings, a string of beautiful memories comes flashing back. The festive season has officially begun in my home country, India. And this brings with itself a hollow realisation of everything that I have left behind- the joy of wearing new clothes, the delicacies made by my Mom and good times spent with friends. Thousands of kilometres away from home, a feeling of pervasive emptiness, and a pang of homesickness engulfs me.
Over the years, the joy of going back home to near and dear ones has been replaced by video calls. For me, festivals have now become synonymous with good food. I try to create beautiful recipes at home just to bring in the feeling of festivity. And, how can any Indian festival be complete without some lip smacking desserts? The recipe that I am sharing today is a wonderful twist to the traditional Jalebis.
Jalebis are one of the most popular and delectable sweets that are relished during any Indian festival. Deep fried and soaked in warm cardamom spiced sugar syrup, these Apple Jalebis (or Apple Fritters) are sinfully delicious and irresistible. A single bite of this scrumptious Jalebi will make you crave for more!
So, this festive season impress your guests with these delicious Apple Jalebis when they drop in for a visit and you will be showered with compliments.
Ingredients:
- 2 apples peeled and sliced in thin rings
- 3/4 cup all purpose flour
- 1/2 teaspoon dry yeast
- 1/2 teaspoon sugar
- 1 tablespoon oil
- Oil, to fry
- 1 1/4 cup sugar
- 1 cup water
- 1/4 teaspoon lemon juice
- 1/4 teaspoon cardamom powder
- 1 tablespoon blenched and sliced pistachios,to garnish
Instructions:
- Dissolve the yeast and 1/2 teaspoon sugar in ¼ cup warm water, and let it sit for about 5 minutes.
- Mix the flour and 1 tablespoon oil together.
- Add the yeast solution to the flour mixture. Make a smooth batter. Add water as needed. The consistency should be like pancake mix.
- Set the batter aside and let it sit in a warm place for half hour.
- For the syrup,boil 1 1/4 cup sugar and 1 cup water together. Add the lemon juice and cardamom powder and boil for about 8 minutes until syrup is thick.
- Dip the apple slices into the flour batter one at a time, making sure the slice is covered with the batter.
- Heat the oil in a deep frying pan .Once the oil is hot, slowly drop the apple slices into the pan.
- Fry the jalebis until both sides are golden-brown.
- Transfer them into the warm sugar syrup and soak them for a few seconds.
- Take them out of the syrup, garnish with chopped pistachios and serve hot.
